Most people love naturally processed coffees if they have the right balance of coffee cherry taste and aroma, as long as it carries a high level of distinct sweetness. This is a "full natural" processed coffee from the central/southern part of the Sidamo region of Ethiopia. We choose to lightly roast this coffee for the sole purpose of preserving the special fruity and distinctly sweet flavors that we paid for.

This is a naturally processed coffee, which is immediately evident by the lighter, yellowish beans alongside the darker beans in the roasted coffee, as well as the sweet taste and aroma of coffee cherry. No worries about the yellow beans, they are important in this case because they add a balance to the otherwise intense fruity character. This coffee is produced by smallholder farms who deliver to private washing stations, and it spends the next 15-20 days being turned and dried on elevated screens to allow airflow over the top and bottom of the cherries. Because of the extended time drying in this natural process, the sweet fruit taste of this coffee is intensified which can be tasted best at a light roast.
